What the Pros say: "Shared cultural heritage and a love of fine wine led to the partnership that gave birth to Covenant Cabernet Sauvignon and RED C. Our wines come from grapes grown in two single Napa Valley vineyards, from which we strive to harness quality commensurate with the rich and profound story of the Jewish people. The 2006 Red C is the second wine of Covenant, and includes a press wine. This is soft, round, deliciously fruity Cabernet that is meant to be drunk in its first 7-8 years of life. The name, of course, is a play on words ... just think it over."
KWO Interpretation: This is the "little brother" to the groundbreaking Napa Cabernet from Covenant Wines in St. Helena. Winemakers use several vineyards to make wine, and use the younger vines to make less expensive blends. This wine gives you the full Napa Cabernet experience at half the price! A favorite kosher wine of acclaimed wine critic Robert Parker!

Covenant Wines - 2007 Covenant
Napa Valley Cabernet Sauvignon
What the Pros say: "Covenant is made from grapes grown on a 3-acre parcel of the historic Larkmead Vineyard in Napa Valley, just north of St. Helena. It is 100 percent Cabernet Sauvignon, picked at the moment when we perceive maturation to be at its peak. The 2006 Covenant, another full-bodied, full-throttle, kosher Cabernet Sauvignon is deep ruby/purple, pure, rich, broad, and savory, with a bit more up-front charm and possibly slightly less structure than the 2005. But again, it is a classic from Napa and should age easily for a decade or more. Jeff Morgan continues to make one of the finest kosher wines on Planet Earth."
KWO Interpretation: This is the real deal. If you haven't heard of this wine, it's time to get on board. Covenant is made by real winemakers on a serious plot of Napa real estate. This wine is probably the only kosher wine to score in the 90s in every vintage since it's inception. Talk about quality! They only make a few hundred cases every year, and they also tend to appreciate in value (not to mention flavor, but you already knew that).

Psagot Wines - 2006 Cabernet Sauvignon
Jerusalem Hills, Israel
What the Pros say: "Psagot Winery is located in the northern Jerusalem Mountains. The Winery’s barrel cellar is located in an ancient cave that was discovered during the process of establishing the winery. The natural damp conditions and constant temperature facilitate the high-quality aging process of the winery’s wines.The grapes (100% Cabernet Sauvignon) were harvested from vineyards in Jerusalem Hills (including our own vineyards in Psagot, Israel). The grapes are brought immediately after harvest into the winery for a gentle crushing and destemming. The must is fermented in stainless steel tanks starting off cool (60º F) and working up to an aggressive fermentation (93º F).
The wine underwent both pump-overs and punch-downs as much as five to eight times a day. The wine additionally underwent a full malolactic fermentation in French and American oak barrels giving the wine a very complex character. The wine was aged in oak barrels for 14 months."
KWO Interpretation: That's a lot of wino mumbo jumbo. Here is what you need to know. We actually visited Psagot (the town and the winery) and did some barrel tasting of the 2006 Cabernet. It was phenomenal! Yes, the wine is aged in an ancient cavern, but the real action takes place in this small, boutique winery where everything is handcrafted to near perfection. There will come a time when this is a $50+ wine. Get on board before that happens!

2005 Yatir Cabernet Sauvignon
Southern Judean Hills, Israel
What the Pros say: Tasting Note - Deep red purple, almost opaque. Bouquet of blackberry, ripe blackcurrant and Mediterranean herbs. Flavor of ripe forest fruit, fresh, elegant with velvety tannins. This kosher wine is designed for long term cellaring. 16,000 bottles made.
KWO Interpretation: This is a limited production wine that is almost as rare as its famous big brother, the Yatir "Forest" super-cuvee. So if you want that powerful wine experience without shelling out $100+, this is the wine to try. Same winemaker, same region, and even some of the same grapes as the more expensive version. Most people have never even heard of this wine (since Yatir is also famous for their Cabernet-Merlot-Shiraz blend, which is also good).

2006 Domaine du Castel - Grand Vin
Judean Hills, Israel
What the Pros say: "Castel Grand Vin is an elegant and "classic" wine with deep color, intense and complex bouquet. Made from a blend of 70% Cabernet Sauvignon, 25% Merlot and 5% of Petit Verdot, the palate is silky and rich with deep black fruit, spices and soft but assertive tannins. It is a well-balanced wine that tends to be velvety and smooth, and the finish is long, silky and clean. The Grand Vin is aged for 24 months in new French oak barrels. Best served with dark meats, veal and steaks."
KWO Interpretation: Castel is the BIG ONE! This is by far the most famous Israeli big boy Cabernet Blend which has stood head and shoulders above the rest. It has the ability to be enjoyed now (after ample breathing time) and is able to age for years ahead. The 2005 vintage in Israel has been of remarkable quality, and this wine is no exception. It even garnered 90 points from esteemed American wine critic Robert Parker! As with many other Israeli "cult wines," this bottling gets more expensive every year. 2003 Chateau Le Crock
St. Emilion, Bordeaux
What the Pros say: Chateau Le Crock has been owned by the Cuvelier family since 1903. Meticulous work in the vineyard and cellar allows the character of the Saint Estephe terroir to be revealed. Deep color, fruity bouquet, strength and complexity characterize this wine. Its aging potential is exceptional.
KWO Interpretation: A very soft elegant wine with pleasant flavors of cranberry and plum, with some elements of coffee and cedar. This wine is drinking well now; no sense in waiting any longer! 2005 Domaine du Castel - Petit Castel
Judean Hills, Israel
What the Pros say: "Petit Castel is a full bodied wine with deep purple color. The wine, made from a blend of 50% Cabernet Sauvignon, 45% Merlot and 5% Petit Verdot, has rich black fruit, cherry and plum and soft well-balanced tannins. The Petit Castel is aged 16 months in French oak barrels."
KWO Interpretation: Little brother of the Grand Vin. Also a tasty bottle, this has a higher Merlot content which makes it a little softer and easier to drink when young. This doesn't require bottle age, although a year or two wouldn't hurt. This wine is perfect for casual dinners and barbeques, when you don't feel like waiting for hours while your fancy bottle of cabernet breathes and opens up. This wine has enough oak to soften the wine, but it's not too heavy as to overwhelm the delicious fruit flavors. A real winner!

2005 -Yarden Cabernet Sauvignon

What the Pros say: "Yarden Cabernet Sauvignon was produced from Cabernet Sauvignon grapes grown in the Golan Heights and Upper Galilee. The cool climate, rocky volcanic soil and high altitude are ideal conditions for growing this classic variety. 2007 Chateau de Parsac - Montaigne St. Emilion, Bordeaux
What the Pros say: 70% Merlot/20% Cabernet Franc/10% Cabernet Sauvignon - Intense purple color. Fresh raspberry and cherry flavors, together with a soft touch of vanilla and spices make for a very charming aroma. Round and soft mouth feel, followed by a medium bodied and yet fleshy sensation. Velvety tannins and long fruity finish.
KWO Interpretation: This is a Kosher wine made by real Bordeaux winemakers, from the esteemed Rothschild Bordeaux organization. It's mostly Merlot, but don't think about the $10 fruity stuff you buy at the grocery store. Merlot from Pomerol can be as intense as a Napa Cabernet! This is the real deal and by far the best value in the house today!

2007 Flechas de los Andes 'Gran Malbec'

What the Pros Say: "Bodega Flechas de Los Andes is a result of the partnership between Baron Benjamin de Rothchild and Mr. Laurent Dassault, on a unique terroir situated at the foot of the Andes cordillera, to the south of Mendoza. The Malbec grape variety reigns in this alluvial terroir of the Andes. The finest plots of the Flechas de Los Andes vineyards have been selected to offer you a wine that is the expression of a pure, top of the range Argentinean Malbec."
KWO Interpretation: This is a collaboration of several large French winemakers who decided to throw a bone to the kosher consumer and let us have something else from South America that isn't Tierra Salvaje, Valero, or Alfasi (not that there's anything wrong with those). Anyway, the wine is inky purple and smells very grapey and leathery. The palate was all tannin when I first got started but kind of evolved into some other dark berries as well as plenty of great earthiness and other manly funk. This is a great wine to drink and should be enjoyed now and onto the next five or so years. Don't get freaked out by the idea of drinking a 2007 red -- they're two seasons ahead of us down there. Classy looking bottle, too. Superb!
